From the ever popular Pioneer Woman! Ree makes the EASIEST pizza crust ever and it is delicious.
1 tsp Instant or Active Dry yeast
1 1/2 C Warm Water
4 C All Purpose Flour
1 tsp Kosher Salt
1/3 C Olive Oil
Sprinkle Yeast over 1 1/2 C warm water. Let stand for a few minutes.
In mixer, combine flour and salt. With the mixer running on low speed (with a paddle attachment), drizzle in olive oil until combined with the flour. Next, gently stir together the water/ yeast mixture and pour it in, just until combined, and the dough comes together in a sticky mass.
Coat a separate mixing bowl with a light drizzle of olive oil and form dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set it aside for 1 to 2 hours. You can also store in the fridge until you need it (I agree with Ree and think its even better a few days later.) I usually make this on a Sunday afternoon and we use it whenever we make pizza casserole that week.
When you are ready for pizza, preheat the oven to 400. Grab half the dough (this recipe makes enough for two, but I halve the recipe occasionally and it works perfectly) Roll the pizza dough out with a rolling pin or just pull it with your fingers- I usually end up rolling first and then finishing it off just stretching it with my hands. When the crust is nice and thin, lay it on an oiled baking sheet or pizza pan. Drizzle a little olive oil on the edges of the dough and spread it with your fingers. Sprinkle a little salt on after then top with your favorite toppings. Bake for 15-17 minutes or until crust is golden.
